Replaces the platform BLE service — for the simulated-sensor test suite (and
a future debug "virtual sensor"). Pass null to fall back to the platform
service again. Everything above the transport (searchAndConnect, the
sensor pool's auto-reconnect) goes through getBleService, so the
whole stack then runs against the replacement.
